The grapes were grown with full sun exposure for all of the full-bodied and ripeness possible. Dark burgundy in color and aroma is a combination of cherry jam and a hand full of caramel-coated Spanish peanuts. The flavors are tarter with cranberries fighting not-so-ripe raspberries for supremacy. Tiny traces of roasted pork, lemon and cumin show up on the long finish. This grape originated in S.A. as a cross pollination between Pinot Noir and Cinsault. Here we refine the wine in the cellar by pressing off the skins early to avoid over extracting. The result is a wonderful wine that has a potpourri and berry aroma. The palate has notes of pomegranate and raspberry with an unmistakable velvet soft full body. Neutral French oak for 5 months. This wine has a tinge of regal color due to is fine age. The aroma is fresh and intense with ripe plum and cassis fruits with a subtle hint of eucalyptus. On the palate, the ripe profiles have assimilated a soft medium body with layers of complexity. 15% Heavy toasted American Oak and 85% neutral French oak barrels for 13 months. This wine was made from co-fermenting 2% viognier skins with 20% whole clusters. This jammy dark red wine has layers of fruit complexity on the aroma and palate with the unmistakable cracked pepper expression. This wine is made from the variety Baco Noir. It is a blend of 7 different vintages to bring together the complexity that would deliver a port style wine. The dark color and bright acidity of Baco Noir combining with heavy toast, 10% residual sugar and 20% alcohol elevate everything into an incredible balance. This is the winemaker’s longstanding favorite.
